Banana flapjacks using almond pulp



Almond pulp is a byproduct of making almond milk. If you are looking for creative ways to reuse leftover almond pulp then let’s make banana flapjacks! If you don’t have any almond pulp lying around, then simply replace the pulp with almond flour.

You only need a few basic ingredients to whip up a batch of banana flapjacks.

Before you use the almond pulp, make sure that you’ve squeezed out all excess liquid from the pulp.
Banana flapjacks using almond pulp
Makes 6
Ingredients
- 2 ripe bananas
- 2 eggs
- ¼ cup almond pulp (or almond flour)
- ½ teaspoon vanilla extract
- Pinch of salt
- Coconut oil for frying
Method
- In a bowl, mash the bananas with a fork.
- Add the rest of the ingredients, except for the coconut oil, and mix well. Set the mixture aside.
- Add the coconut oil to a medium-hot, non-stick pan that has a lid.
- When the pan is hot, scoop the mix into the pan to make round flapjacks.
- Cover with a lid to allow some steam to build up and to assist with the cooking process.
- After 2 to 3 minutes, flip the flapjack and cook further for another two to 3 minutes.
- Enjoy with toppings of your choice.
