Overnight chia seed porridge

This overnight chia seed porridge is easy to prepare the night before and will be useful to have when you’re on a busy schedule. It’s as easy as mixing a few ingredients in a container, refrigerating it overnight, and grabbing it on your way to work the next day. Add a few toppings of your choice and you’re well on your way to eating a healthy breakfast or snack, loaded with antioxidants and fiber.

Overnight chia seed porridge

Serves 1

Ingredients

  • ¼ cup chia seeds
  • 1 cup almond milk
  • 1 tablespoon honey or xylitol
  • ½ teaspoons vanilla extract
  • Pinch of salt
  • Toppings of your choice (fresh berries, low carb granola)

Method

  1. Mix all the ingredients except the toppings in a container of your choice.
  2. Leave in the refrigerator overnight.
  3. When it’s time for breakfast or a late snack, open the container and stir the chia. Add a few toppings of choice and enjoy!
