Quick cauliflower mash

Goodbye potatoes, hello cauliflower. Didn’t I say that cauliflower will become your new best low-carb friend? Whether you love or hate this vegetable, it can be transformed into something creamy and delicious by just adding loads of butter! And we do love butter!

You only need a few humble ingredients to create the easiest side.

The end result. Add more butter or a few sprigs of thyme as garnish.

Quick cauliflower mash

4 servings

Ingredients

  • ±700g cauliflower, broken into florets
  • 100g butter
  • Pinch of nutmeg
  • Salt and freshly ground black pepper

Method

  1. Steam or boil the cauliflower florets until soft.
  2. Drain the water.
  3. Add butter, nutmeg, salt and pepper, and mash the cauliflower.
