Delicious herb butter

This easy-to-make herb butter tastes incredible, especially on sweet potatoes! My mom found this recipe in an issue of the South African LOSE IT! magazine a few years ago, and it’s been a favourite ever since. We love to whip this up at family braais when we have sweet potatoes on the coals or, when we’re lazy, in the oven. When it is time to dish up, we (mostly ‘me’ I guess) will add a pile of this on my sweet potatoes!

Now I know, buying fresh herbs can be pricey, especially if you only need two grams of each as the recipe calls for! So, I urge you to start a herb garden and grow herbs you use most often. Buying the actual plants won’t be as pricey in the long run and if your green fingers do you any justice, you’ll be saving money in no time!

The basic ingredients you’ll need to make a delicious herb butter for sweet potatoes or other vegetables.

Make sure your butter is nice and soft for easy mixing. Simply leave it on your kitchen counter for a few hours.

Delicious herb butter

Makes ±135g

Ingredients

  • 125g butter, softened
  • 2g sage, finely chopped
  • 2g basil, finely chopped
  • 2g parsley, finely chopped
  • 1 teaspoon chilli flakes
  • 2 cloves of garlic, crushed
  • Salt and freshly ground black pepper to taste

Method

  1. Leave the butter out for at least 45 minutes to soften up nicely.
  2. When it’s a soft consistency, mix the butter with the remaining ingredients.
  3. Enjoy it with baked sweet potatoes or other vegetables.

How to prepare the baked sweet potatoes?

Poke the sweet potatoes with a fork several times. Rub with oil and place the sweet potatoes on a baking tray. Sprinkle some salt and bake in a preheated oven at 220°C for about 45 to 60 minutes until soft.
